What is Chicha Morada?

Chicha Morada is a traditional Peruvian drink made from purple corn, a unique variety of corn native to the Andes, famous for its deep, natural color. It is gently simmered with fruits and spices such as pineapple, apple, cinnamon, and cloves, then sweetened and finished with a touch of fresh lime juice. Served cold, it is refreshing, vibrant, and full of history.

Origin

Purple corn has been cultivated in the Andes since pre-Inca times, especially in the central highlands of Peru. Ancient Peruvians used it not only as food, but also as a natural dye and traditional medicine. Over centuries, these practices evolved into today’s Chicha Morada, now one of Peru’s most iconic beverages—served in homes, restaurants, and celebrations throughout the country.

Recipe

Chicha Morada – 1 L Final Yield

Ingredients:

  • 250 g purple corn (about 2 cups)

  • 1.5 L water (for boiling and reducing)

  • ½ pineapple (peel and core only, well washed)

  • 1 green apple, chopped (optional, adds freshness)

  • 1 cinnamon stick (or 2 small ones)

  • 3 whole cloves

  • 100–120 g sugar (½ to ⅔ cup, adjust to taste)

  • Juice of 1 fresh lime

Preparation:

  1. In a pot, combine purple corn, pineapple peel and core, apple (optional), cinnamon, and cloves.

  2. Add 1.5 liters of water and bring to a boil.

  3. Simmer over medium heat for 45–50 minutes, until the liquid reduces to about 700–750 ml and turns very dark and concentrated.

  4. Strain and discard the solids.

  5. Stir in the sugar until fully dissolved.

  6. Top up with cold water to make exactly 1 liter.

  7. Add the fresh lime juice just before serving.

  8. Chill and serve cold.
